The past few weeks, we have been getting beets in our CSA box. Yum! I would have never known that I liked beets if Craig wasn’t such a foodie. He loves to cook and experiment with different foods. And this is the fancy (and delicious) salad he made with our beets. Enjoy!

Roasted Beet & Feta salad recipe

Combine all ingredients in the amounts desired. Like beets? Add more. Want more greens? Add more. Then, top with Orange Vinegarette (recipe below).

Ingredients

Roasted Beets (bake at 400 degrees fahrenheit for 45 mins to 1 hour wrapped in foil until fork tender)

Crumbled Feta

Salad Greens

Vinegarette Recipe

Directions: combine all ingredients in mason jar and shake well (or stir together in a bowl).

3-4 tsp of fresh orange juice

1 tsp olive oil

Garlic (one clove) minced

1 tsp Shallot minced

S&P to taste
