In an effort to eat more vegetables and less meat, my husband and I are making a concerted effort to seek out new vegetarian recipes. We’re not going to completely stop eating meat – we just want to eat more food that is healthier for us and more sustainable for the environment. Plus, we figure if we spend less money on red meat, we can eat more expensive fish! The only fish we can typically afford is tuna fish – and I’m not sure that even counts…
This is a delicious recipe for Summer Corn and Peach Tacos adapted from a recipe found on Vegetarian Times. Might be the best vegetarian meal I’ve ever made. Since we got fresh corn and peaches in our CSA (community support agriculture) box last week, this recipe was perfect. I love that our CSA box forces us to eat fruits and vegetables that are in season and local!
I highly recommend this recipe. It was simple to make, amazingly delicious, and surprisingly filling.
Summer Corn and Peach Tacos (adapted from Vegetarian Times recipe)
30 minutes or fewer
- Corn from 2 ears of corn
- 3 small peaches cut into slices
- Heaping handful of arugula (or however much arugula you want)
- 1/4 cup crumbled feta cheese
- 1/2 shallot, thinly sliced
- Juice from 1 lime
- 1 Tbs. olive oil
Bring pot of water to a boil. Add corn to the water and cook 5 minutes. Remove corn and cut the corn off of the cob. Toss corn with peaches, arugula, feta, shallot, lime juice, and oil in large bowl. Put it in tortillas and eat!
